Postnvy option:
Wash and dry the beets, wrap in foil and bake (about 1 hour) in a preheated 160 C oven until it is punctured with a fork. Or boil in a double boiler. Let cool, then brush.
Grind in blender all ingredients except zest in a blender. Add honey to taste, vinegar, salt and pepper. Transfer to a bowl and garnish with zest.
Syroedchesky option

Grind all ingredients in blender except the peel. Try and season to taste and garnish with zest.
Beets can also chop the other way: to pass through the juicer and use the juice and cakes.
